Introduction: | Baking powder is extensively used in the manufacture of bakery products. It is a chemical leavener for bakery dough. Baking powder can be manufactured with a simple technology which can be adapted in rural areas. Such units established in rural parts can meet the ever-growing demand of the manufacturers of the bakery product. The constituents of baking powder are Sodium bicarbonate, edible starch and an acid reacting component. According to the specifications, the baking powder should be a free-flowing white and odourless powder, free from insect or fungus infection and other adulterants. |
PROCESS | The process of manufacturing consists of mixing of the above constituents in their fine powder form thoroughly and packing in LDPE pouches with duplex board carton as external packaging material. |

PLANT PARAMETERS: | The equipment needed for the process include, sieve (with suitable capacity), ribbon blender, packing machine, etc., which are available in the country. The efficacy of baking powder depends upon the amount of carbon dioxide it releases on wetting. |
